Thats the very first thing I do when I get ready to play one of my friends, I beat them all the time, and they get real frustrated, so the cheating route wouldn't be a bad option for them, so I have to make sure they don't cheat me out of my game

Just start a franchise and sign trotter. Play for a few years and let them progress. Export the team and voila your unbeatable. Best pass defense play in 3-4 is the cover 2 play on the 1st row but try man QB spy in the quarter as well if he passes as much as you say he does.
