I was just listening to Faith No More's version of War Pigs on my iPod and got to thinking what other cover versions of songs I like.

Johnny Cash doing NIN's "Hurt" is good.
I also like the Foo Fighters doing Prince's "Darling Nikki".
Half of Sublimes 40oz album is covers, and most of them are pretty good too.
The Black Keys doing "Have Love Will Travel" is pretty good.
Gray Matter doing the Beatles "I am the Walrus" is a fun listen.
Propagandhi doing "I want you to want me" by Cheap Trick
