False start vs. Encroaching..
I am not absolutely clear on these two. Please forgive me hahaha.
Can someone elaborate? I believe false start is applied to the Offense and Encroaching is applied to the defense but are they not the same???

False start is generally O Line or QB related basically moving before the snap of the ball. Encroachment is on the defense if they come across the line of scrimage and contact an offensive player. If they do not contact then it is off sides.

another difference is that encroachment automatically stops the play, like false start, but offsides the play can go on and the offense can try to get a play going anyway

Also, keep in mind that a player can jump offsides, but if they get back on their own side before the ball is snapped, the play continues and there IS NO FLAG. False start automatically stops play and charges the penalty no matter what.
Now, there's also Neutral Zone Infraction, which applies to both sides (though it's almost only called on the defense). Basically, no one except the center can be lined up in the neutral zone....which is the front tip of the football to the other tip.

Usually when a defensive player is offsides it's when they're just ahead of the snap-count, encroachment is when the ball hasn't been snapped (and an offensive player is touched like you said).

exactly. Encroachment is when the defensive player makes contact with the offensive player. This results in the play being blown dead. Now sometimes the ref will call a play dead on offsides if a defensive player comes across the line and has a direct shot at the quarter back. The ref will identify this by claiming," defense offsides, unabated to the quarter back".
