with hashes you have a wide side and a short side, which can be used for wide plays. like if it's on the left hash you've got a lot more run to sweep the ball right or to run some kind of action pass that way. it's also tougher on the defense who often uses the field markings as landmarks - like on a 2-deep, the safties usually use the hashes and the numbers to know where to make their drops, but against an offense lined up on the hash, theyve got to adjust a bit.

if the ball dies outside of the hashes it is spotted right on the edge of the has, otherwise the ball is spotted right where it the play ends.

high school hash marks are the widest - meaning that you've often got the offense lined up a lot closer to the sidelines, and a much wider wide side of the field. college is a little smaller and NFL hashmarks only extend about as wide as the field goal posts.
